Kitchen Creations: Indian-inspired dishes to make at home, by Shelly Nuruzzaman

Shelly Nuruzzaman is entrepreneur and co-Founder of BANG! Curry, the Brick Lane-inspired meal kits that have taken the UK by storm, selling over 750,000 kits in the first five years and gaining millions of likes and views on social media.

Rated 4.7 out of five stars on TrustPilot, established as the best-selling curry kit on Amazon and recently launched in Waitrose, Shelly shares her inspiration behind starting BANG! Curry:

“Getting just the right blend of 14 or 15 spices right is really tricky. There are so many different combinations and just the smallest tweak can result in a completely different flavour. As a 10-year-old, I couldn’t get my head around all the spices and cooking steps to make a curry dish. To make it easy for me, my mum would arrange a little palette of spices that were the exact, perfect quantity and combination, so I went away knowing I could make something that would taste good.

“I want to give people this same ability with BANG! Curry. Each kit contains the relevant spice mix, base mix and dry ingredients, doing the complicated legwork of a curry dish and leaving consumers to follow simple 3-step instructions to create amazing dishes at home, from scratch. As much as I love how my mum poured time and love into her food, it’s not a reality for many families. Lives are much busier nowadays and most people just don’t have the bandwidth to spend hours cooking.”

Punchy Protein Egg Curry

Egg curry is an intensely satisfying and spicy dish, originally invented as a simple fix for when you don’t have much to hand! Perfect for vegetarians, or anyone looking to reduce meat in their diet. Don’t be fooled – despite its simple ingredients, our egg curry doesn’t skimp on flavour.

Ingredients

  • 1 BANG! Jalfrezi Kit
  • 6 hard-boiled eggs, peeled
  • 2 fresh tomatoes, or ½ can of tinned tomatoes

Best served with flatbreads and rice

Step 1: Soak it!

  • In a bowl, soak the onion, ginger and garlic base with 100ml of water. Leave for 1 minute.
  • At this stage, peel and dice the potato and set aside.
  • In a large pan on low heat, fry gently for 3-4 minutes in a small amount of oil.

Step 2: Spice it!

  • In a separate bowl, combine the spice mixture with 50ml of water and blend into a smooth, thick paste.
  • Add the spice paste and tomatoes of choice to the pan with the onion base and continue to cook on low heat for a further 3-4 minutes.

Step 3: Make it your own!

  • Add the cubed potatoes and boiled eggs, raise the heat for about three minutes and stir continuously to combine.
  • Add up to 150ml of water, then lower the heat and cover, allowing to cook for a further 20-25 minutes.
  • Garnish with fresh herbs or yoghurt, and enjoy!
